Sous Chef (BOH), FT


Observes workers, engages in preparing, portioning and garnishing foods to ensure that methods of cooking and garnishing and sizes of portions are as prescribed. Gives instructions to cooking personnel in fine points of cooking. Cooks and carves meats, and prepares dishes such as sauces and soups. Cuts, trims and bones meats and poultry for cooking. Receives, counts and examines foodstuffs and supplies. Ensures quality and meets the standards and specifications. Selects and develops recipes based on types of food to be prepared. Supervises personnel engaged in preparing, cooking and serving meats, sauces, vegetables, soups and other foods. Assumes responsibility for kitchen in absence of Executive Chef. Portions foods, or gives instructions to workers as to proportions and methods of garnishing. Supervises, coordinates and prepares food for all occasions. Will assist the Executive Chef in the following: Screening job applicants, recommending promotions, transfers and dismissals. Helps train new hires. Estimates food consumption. Ordering food and supplies as needed.


5+ years culinary training and professional kitchen training preferred. Position requires flexible availability and the ability to work nights, weekends and holidays. Strong knowledge of food, wine, liquor, beer and styles of service. A positive attitude and the ability to work effectively with others. Must be able to pass a pre-employment drug screen and qualify for a Tribal Gaming License.

All positions are part-time unless otherwise specified.
